
This recipe is actually a modification of Jamie Oliver’s lemon linguine recipe. We added some tuna, olives and cherry tomatoes to it which gave it more flavour.
Ingredients
500g Linguine
Juice of 3 lemons
Zest 1 lemon ( optional)
6 tablespoon extra virgin olive oil
125g Parmesan Cheese
1 Jar pitted black olives (halved)
1 box of cherry tomatoes (halved)
2 cans of tuna
1 bag of fresh basil leaves
Method
1. Mix the lemon juice with olive oil in an empty jar. Shake it well.
2. Cook the linguine in boiling water adding salt and olive oil to the water to prevent the pasta from sticking and giving a bit more taste.
3. Drain the pasta and put it back in the pot.
4. Add the cherry tomatoes, olives, tuna, and cheese to the pasta and mix.The heat from the newly boiled pasta will heat up the ingredients as well as melt the cheese.
5. Add the lemon juice and olive oil mixture to the pasta to taste. Some people prefer it less sour and others prefer otherwise. Add salt and pepper to taste.
6. Lastly add fresh basil leaves to the pasta, allowing it to wilt from the heat releasing its flavour. Add the lemon zest for garnishing.
7 .Serve and enjoy. Eat while hot.
* Substitute the tuna for chili tuna for extra kick.
