Recently we had a seafood cook out at Steve’s place and the recipe I made was ‘Baked Fish Pie’. I actually found this recipe while surfing Jamie Oliver’s website and decided to do this because it was just soooo easy. I modified it abit on my own, since not all the ingredients are available. So here’s the recipe.
Ingredients
1kg potato
1 carrot
2 sticks of celery
half and onion
150 g of cheddar/ parmesan cheese
1 lemon
250g dory fish
100g prawns
Olive oil
Dill
Dried parsley
Bacon bits
Salt
Pepper
Recipe
1. Bring a big pot of salted water to a boil.
2. Peel and cut the potatoes and cut it into 2cm chunks and chuck them into the boiling water and allow it to boil for about 12 minutes or until you can stick a fork into it.
3. While the water is boiling, start peeling the carrots and chopping the onions and celery.
4. Get your baking tray and stand a box grater inside and grate the carrots and 3/4 of the cheese. ( Leave the remaining 1/4 for later)
5. Cut the fish into bite size chunks and place all the ingredients including the prawns together into the baking tray.
6. Drizzle some olive oil over it and add in some lemon zest and some lemon juice. Also add in the dill.
7. Now mix everything up with your hands, and make sure everything is evenly spread out in the baking tray.
8. Preheat the oven to 200C.
9. Drain the potatoes and drizzle some olive oil and add a pinch of salt and pepper and start mashing. You can also now add the bacon bits and the remaining 1/4 of the cheese and dried parsley.
10. Now evenly spread your mash potatoes over the top of the fish and grated vegetables.
11. Place it into the over for approx 40 mins or until the top starts to get golden brown and you know your pie is ready.
12. Eat when hot..ENJOY
** You can also add in spinach leaves and tomatoes for this dish, but I find that the tomatoes makes the dish very wet.
*** Try and dry your ingredients when making this dish, because any water left will create a very wet feel to it.
